
Mediterranean Salmon Power Bowl

Preheat oven to 200°C (400°F). Toss sweet potato cubes and broccoli with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes.

Season salmon fillets with salt, pepper, and minced garlic. Heat remaining olive oil in a large pan over medium-high heat.

Sear salmon skin-side down for 4-5 minutes, then flip and cook 3-4 minutes until internal temperature reaches 63°C (145°F).

Meanwhile, prepare tahini sauce by whisking tahini with lemon juice and 2-3 tbsp warm water until smooth.

Fluff quinoa with a fork and season with salt and herbs if desired.

Divide quinoa among 4 bowls, top with roasted vegetables and flaked salmon. Drizzle with tahini sauce and serve immediately.
