
Turkish Menemen Scramble with Spiced Ground Turkey

Heat olive oil in a large cast iron skillet or heavy pan over medium heat (160°C/320°F).

Add diced onion and cook for 2-3 minutes until softened and translucent.

Add minced garlic and cook for another 30 seconds until fragrant.

Add ground turkey to the pan, breaking it up with a wooden spoon. Cook for 4-5 minutes until browned and cooked through.

Season the turkey with cumin, paprika, Turkish red pepper flakes, salt, and black pepper. Stir to combine.

Add diced bell pepper and cook for 2 minutes until slightly softened.

Add diced tomatoes to the pan and cook for 3-4 minutes, stirring occasionally, until tomatoes break down and create a chunky sauce.

Create small wells in the mixture and crack the eggs into the wells. Alternatively, beat eggs lightly and pour over the entire mixture.

Reduce heat to low and gently scramble the eggs with the turkey and vegetable mixture, stirring carefully to combine without overcooking the eggs.

Cook for 2-3 more minutes until eggs are just set but still creamy.
